Ingredients
Scale
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
1/2 cup diced jalapeños (fresh or pickled)
1/2 cup cowboy caviar (a mix of black beans, corn, tomatoes, onions, lime juice)
1 tsp garlic powder
1 tsp smoked paprika
1/4 cup fresh cilantro, chopped
Tortilla chips (for serving)
Instructions
Combine the Cheeses: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and shredded pepper jack cheese. Use a spatula and mix well; it’ll start to come together nicely.
Add the Fun Stuff: Add the diced jalapeños, cowboy caviar, garlic powder, smoked paprika, and chopped cilantro to the cheese mixture. Don’t be shy—mix until everything is well combined. You want those flavors to marry.
Shape It Up: Shape the mixture into a log or ball—whatever you prefer. You might find it easier to wet your hands a bit to prevent sticking.
Chill Out: Wrap your cheese log snugly in plastic wrap and refrigerate for about 120 minutes to firm up. This step is important, so don’t rush!
Serve and Enjoy: Serve it up with crunchy tortilla chips for dipping. Everyone will be reaching for seconds, for sure!
Notes
Use fresh ingredients for the best flavor. Consider rolling the log in chopped herbs or nuts for added presentation.
