A vibrant and hearty Cowboy Salad that combines fresh veggies, beans, and a tangy dressing, perfect as a main dish or side.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or canned
  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • BBQ dressing or ranch dressing

Instructions

  1. Combine the black beans, corn, cherry tomatoes, diced bell pepper, red onion, avocado, and cilantro in a large bowl.
  2. Toss gently to mix, being careful with the avocado.
  3. Drizzle with your BBQ or ranch dressing and toss again to coat everything evenly.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
