Ingredients

  • 2 cups vegetable or chicken broth
  • 1 cup diced onions
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 cups cooked shredded chicken
  • 1 cup uncooked pasta or rice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (optional)
  • Fresh herbs for garnish (parsley or thyme)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until translucent, about 3-5 minutes.
  2. Stir in mixed vegetables and cook for an additional 5 minutes. Stir often to prevent sticking.
  3. Add broth and bring to a simmer. For casserole, toss in cooked chicken and pasta or rice at this stage.
  4. Season with garlic powder, salt, and pepper. Cook until pasta or rice is tender, about 10 minutes.
  5. If desired, sprinkle with shredded cheese and let it melt. Garnish with fresh herbs before serving.
