A creamy, cheesy appetizer bursting with crab and shrimp flavor, wrapped in a crispy tortilla.

Ingredients

  • 1/2 lb cooked shrimp, finely chopped
  • 1/2 lb cooked crab meat, shredded
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup queso dip (mild or spicy)
  • 1 tbsp fresh cilantro, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 8 small flour tortillas
  • 2 tbsp butter or oil (for frying)

Instructions

  1. Combine the chopped shrimp, shredded crab, Monterey Jack cheese, softened cream cheese, queso dip, fresh cilantro, garlic powder, and smoked paprika in a large mixing bowl, stirring until creamy.
  2. Take a tortilla and place 2-3 tablespoons of the filling in the center, rolling it tightly and securing with a toothpick.
  3. Heat butter or oil in a skillet over medium heat. Carefully place the quesadillas in the pan and fry until golden brown and crispy, about 2-3 minutes per side.
  4. Remove the toothpicks, plate them up, and drizzle with warm queso, sprinkling with fresh cilantro.
  5. Serve immediately for that gooey, irresistible experience.

Notes

Make-ahead: Prepare filling in advance and store in the fridge. For healthier options, use an air fryer.
