A comforting and creamy dish featuring orzo pasta, tender chicken, and fresh spinach, perfect for quick meals or special occasions.

Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 1 cup fresh spinach
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion and minced garlic until fragrant, about 2-3 minutes.
  3. Brown the diced chicken breast until browned on all sides, about 5-7 minutes.
  4. Cook the orzo pasta and chicken broth, bringing to a boil, then reducing to a simmer for about 10 minutes.
  5. Add fresh spinach and heavy cream, seasoning with salt and pepper. Mix well.
  6. Serve warm, topped with freshly grated Parmesan cheese.

Notes

Allow the dish to thicken as it cools. Reheat with a splash of broth if needed.
