8 ounces pasta (penne or fettuccine)
2 tablespoons olive oil
1 pound chicken breast, diced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup pesto sauce
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for 5-7 minutes, or until the chicken is cooked through and no longer pink.
Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant.
Pour in the heavy cream and pesto sauce, stirring to combine. Bring the mixture to a gentle simmer.
Add the cooked pasta to the skillet and toss to coat in the creamy pesto sauce. Stir in the grated Parmesan cheese until melted and well combined.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve hot, garnished with fresh basil leaves.
