A cozy and hearty soup with rich chorizo flavor, creamy texture, and tender potatoes that warms you from the inside out.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chorizo sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chorizo and cook until browned, about 5-7 minutes.
  3. Stir in the diced onion and minced garlic, sauté for 3-4 minutes.
  4. Add the diced potatoes and cook until they begin to soften.
  5. Pour in the broth and bring to a boil, then reduce heat and let simmer for 15-20 minutes.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with chopped parsley.

Notes

Stir often to prevent sticking; add splash of broth if soup thickens too much.
