  • 1/2 teaspoon pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 ounces fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. Sear the chicken in a large skillet with butter and olive oil, about 5-7 minutes per side.
  3. Cook the diced mushrooms until browned, then add minced garlic and sauté for another minute.
  4. Deglaze the pan with chicken broth, scraping up browned bits and simmer for 2-3 minutes.
  5. Make the sauce creamy by stirring in heavy cream and chopped herbs, letting it simmer for about 5 minutes.
  6. Bake the chicken in the creamy sauce at 375°F for 10-12 minutes until cooked through.

Notes
