  • 2 cups cooked shredded chicken
  • 4 cups fresh spinach
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Pour in the chicken broth and bring it to a boil.
  3. Add the gnocchi and cook according to package instructions.
  4. Stir in the shredded chicken, spinach, and heavy cream.
  5. Season with thyme, salt, and pepper.
  6. Cook for another 5 minutes until heated through.
  7. Serve hot, garnished with additional herbs if desired.

Notes

For extra silkiness, stir in the cream last and warm gently without boiling. Toast thyme briefly with onions for added aroma.
