Ingredients

  • Gnocchi (fresh or store-bought)
  • Sun-dried tomatoes (jarred, in oil preferred)
  • Fresh garlic (minced)
  • Heavy cream
  • Grated Parmesan cheese
  • Olive oil
  • Fresh herbs (basil or parsley)
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to package instructions.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the minced garlic and sauté until fragrant—about 1 minute.
  4. Toss in chopped sun-dried tomatoes and cook for 2-3 minutes until soft.
  5. Pour in the heavy cream and bring it to a gentle simmer.
