1/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
8 egg roll wrappers
1 tablespoon melted butter
2 tablespoons sugar

Instructions
Prepare the Filling: In a mixing bowl, combine chopped peaches, brown sugar, cinnamon, and nutmeg until evenly mixed.
Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface. Spoon a tablespoon of the peach filling into the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Dab the edge with a bit of water to seal.
Preheat Oil: In a deep fryer or large pan, heat vegetable oil to 350°F (175°C).
Brush and Sprinkle: Lightly brush each egg roll with melted butter and sprinkle with sugar.
