A comforting and flavorful Cajun chicken pasta made effortlessly in a slow cooker, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts
  • 1 cup of pasta (penne or rotini)
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of shredded cheese (cheddar or Monterey Jack)
  • 1 tablespoon of Cajun seasoning
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Place the chicken breasts in the crock pot.
  2. Add the chicken broth, Cajun seasoning, chopped bell pepper, and onion.
  3. Cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is tender.
  4. Remove the chicken and shred it, then return it to the crock pot.
  5. Stir in heavy cream and cooked pasta, then add shredded cheese.
  6. Mix until the cheese is melted and everything is combined.
  7. Season with salt and pepper to taste and garnish with green onions before serving.

Notes

For a lighter version, substitute heavy cream with coconut milk or Greek yogurt. Can customize with extra veggies or protein swaps such as shrimp or turkey.
