Wash and dry the cucumbers. This is important—excess moisture can make your bites soggy later.
Slice the cucumbers into 1/2-inch thick rounds and lay them on paper towels. Give them a gentle pat to remove any extra moisture.
Prepare the filling by combining cream cheese, sour cream (or Greek yogurt), dill, chives, lemon juice, garlic powder, salt, and pepper in a mixing bowl. Mix until smooth and fluffy.
Pipe the filling into a piping bag fitted with a star tip (or use a spoon).
Top each cucumber round with the cream cheese filling.
Garnish with cherry tomato slices, capers, or everything bagel seasoning if desired.
Chill for about 10 to 15 minutes to enhance flavors.
