A refreshing and easy-to-make cucumber salad sandwich that’s perfect for lunches, snacks, or picnics.

Ingredients

  • 2 large Cucumbers
  • 8 oz. Cream cheese, softened
  • 1/4 cup Mayonnaise
  • 1 tbsp Dill (fresh or dried)
  • Salt and pepper to taste
  • 8 slices Whole grain or white bread
  • Optional: Red onion slices or sprouts

Instructions

  1. Wash the cucumbers thoroughly and slice them thinly.
  2. Combine the softened cream cheese, mayonnaise, dill, salt, and pepper in a bowl. Mix until smooth and creamy.
  3. Spread a generous layer of the creamy mixture on each slice of bread.
  4. Top half of the slices with the sliced cucumbers and optional red onion or sprouts.
  5. Place the other halves of bread on top, press gently, and slice into quarters or halves.

Notes

Let the sandwiches sit for a few minutes before serving to enhance the flavors. Slice cucumbers right before assembly to keep them crunchy.
