  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1 cup dark chocolate, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • Chocolate shavings or raspberry sauce for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the crushed chocolate graham crackers and melted butter in a bowl.
  3. Press this mixture into the bottom of your springform pan to form the crust.
  4. Beat together the cream cheese and powdered sugar until smooth in a large mixing bowl.
  5. Add the sour cream, melted dark chocolate, and vanilla extract. Mix until fully combined.
  6. Fold in the fresh raspberries gently.
  7. Pour the cheesecake mixture over the crust and spread it evenly.
  8. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  9. Allow it to cool to room temperature.
  10. Refrigerate for at least 4 hours or overnight.
  11. Garnish with chocolate shavings or raspberry sauce before serving.
