Sweet and tangy baked rhubarb bars with a buttery oatmeal crust, perfect for snacks or desserts.

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • ½ cup unsalted butter, melted
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups rhubarb, chopped
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. Combine the rolled oats, flour, brown sugar, melted butter, salt, and cinnamon in a large mixing bowl until crumbly.
  3. Press half of the mixture into the bottom of the greased baking dish.
  4. Toss the chopped rhubarb with the granulated sugar, cornstarch, and lemon juice in another bowl. Spread the filling over the crust.
  5. Sprinkle the remaining oat mixture over the rhubarb filling.
  6. Bake for 30-35 minutes or until the top is golden and the filling is bubbly.
  7. Cool completely before cutting into bars.

Notes

For best results, use fresh rhubarb and allow the bars to cool completely before cutting.
