Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cherries, pitted and chopped
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs, one at a time, then stir in the almond extract.
  4. Mix the flour, baking powder, baking soda, and salt in another bowl.
  5. Combine the dry ingredients to the creamed mixture alternately with the milk.
  6. Add the chopped cherries and sliced almonds, folding gently.
  7. Pour the batter into your prepared loaf pan and bake for 50-60 minutes.
  8. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Letting the bread cool completely helps the flavors meld better. You can elevate it with a simple icing or mix in some zest for extra brightness.
