Easy Air Fryer Potato Skins

Crispy and flavorful potato skins made effortlessly in the air fryer, topped with bacon, cheese, and green onions.

Ingredients

  • 3 russet potatoes
  • 2 tablespoons olive oil, divided
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions or scallions
  • Ranch Dressing for drizzling
  • Optional Ranch Seasoning
  • ½ teaspoon chives (dried or fresh)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. Scrub the potatoes to ensure they are clean.
  2. Rub each potato with olive oil (about ½ tablespoon).
  3. Place the potatoes in the air fryer basket and air fry for 35-45 minutes at 400 degrees until soft.
  4. Remove the potatoes from the air fryer and let cool for about 20-30 minutes.
  5. Slice each potato in half and scoop out the inner flesh, reserving ¼th of an inch along the bottom and sides.
  6. Drizzle or spray the inside of the potatoes with olive oil and season with salt and/or your favorite seasoning.
  7. Top each potato with crumbled bacon and shredded cheddar cheese.
  8. Return the skins to the air fryer and cook for 6-10 minutes at 350 degrees until the cheese is melted.
  9. Top with green onions and ranch dressing.

Notes

  • Cooking time may vary depending on the size and number of potatoes.
  • The cheese can be browned more or less depending on personal preference.
