A crunchy and creamy salad made with fresh broccoli, shredded chicken, bacon, and a delicious dressing.

Ingredients

  • 4 cups broccoli florets
  • 2 cups shredded chicken (rotisserie chicken works great!)
  • 1 cup chopped bacon (crispy)
  • 1 cup mayonnaise
  • ½ cup dried cranberries
  • ½ cup sunflower seeds
  • ½ cup red onion, diced
  • Salt and pepper to taste

Instructions

  1. Combine the broccoli florets, shredded chicken, and chopped bacon in a large bowl.
  2. Mix together the mayonnaise, dried cranberries, sunflower seeds, and diced red onion in a separate bowl. Season with salt and pepper to taste.
  3. Toss the dressing over the broccoli mixture and gently combine.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

For added crunch, consider adding roasted nuts or crispy chickpeas. Feel free to customize by adding grapes or using Greek yogurt instead of mayonnaise.
