1 pound ground beef
1 cup shredded cheese (cheddar or mozzarella)
4 flour tortillas
1 tablespoon taco seasoning
1 tablespoon olive oil
Optional toppings: salsa, sour cream, guacamole
Instructions
In a skillet over medium heat, add olive oil and ground beef. Cook until browned, breaking it apart as it cooks.
Stir in taco seasoning and mix well.
Lay a tortilla in the skillet, sprinkle half the cheese on one half of the tortilla, add the beef mixture on top, and then sprinkle the remaining cheese.
Fold the tortilla over and cook until the bottom is golden brown, then flip and cook the other side until golden and the cheese is melted.
Repeat with the remaining tortillas.
Cut into wedges and serve with optional toppings.
Notes
For best results, preheat the skillet and drain excess fat after cooking the beef to avoid soggy quesadillas.
