A creamy and sweet side dish that’s perfect for any occasion, Easy Creamed Corn is simple to make and incredibly delicious.

  • 4 cups sweet corn kernels (fresh, frozen, or canned)
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Prepare the Corn: If you’re using frozen corn, thaw it first or if you’re using canned corn, be sure to drain it thoroughly.
  2. Melt the Butter: In your medium saucepan, melt the butter over medium heat.
  3. Add Flour: Whisk the flour into the melted butter and cook for about a minute.
  4. Milk Time: Slowly pour in the milk, whisking continuously until it’s nice and smooth.
  5. Stir in Cream and Cheese: Add the heavy cream and softened cream cheese, stirring until it melts into the mixture.
  6. Add the Corn and Seasonings: Stir in the corn, sugar, salt, black pepper, and garlic powder. Let it simmer for about 10 to 15 minutes.
  7. Mash for Creaminess (Optional): If you like a creamier texture, lightly mash a portion of the corn right down in the pot.
  8. Finishing Touches: Stir in the parmesan cheese until it’s completely melted and mixed in.
  9. Rest and Serve: Remove from heat and let it rest for about 2 minutes. Garnish with chopped parsley before serving warm.

For variations, try adding diced jalapeños for heat or swapping in different cheeses.
