  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1 teaspoon fine salt
  • 1 tablespoon granulated sugar
  • 1/2 cup ice water, plus more only if needed
  • 1 teaspoon apple cider vinegar or lemon juice

Instructions

  1. Add the flour, salt, and sugar to a large mixing bowl and whisk until combined.
  2. Toss in the cold, cubed butter and cut into the flour using a pastry cutter or your fingertips until you see pea-sized pieces.
  3. Stir the vinegar or lemon juice into the ice water in another bowl.
  4. Sprinkle a few tablespoons of ice water over the flour mixture, using a fork to toss gently.
  5. Continue adding water, one tablespoon at a time, until the dough holds together when squeezed.
  6. Turn the dough onto a clean surface and press it together, forming two discs without kneading.
  7. Wrap each disc in plastic wrap and chill in the fridge for at least 30 minutes.
  8. Roll out the chilled dough on a lightly floured surface, aiming for a circle larger than your pie dish.
  9. Fit the dough into the pie dish without stretching it, trim excess edges, and crimp the edges according to preference.
  10. Chill the shaped crust again before filling or blind-baking.
