Delicious and satisfying keto-friendly chicken lettuce wraps that are easy to make and perfect for quick meals or snacks.

Ingredients

  • 2 cups shredded chicken, cooked
  • 1 cup creamy Greek yogurt
  • ½ cup blue cheese, crumbled (or any cheese you like)
  • Large lettuce leaves (romaine or butter lettuce)
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, avocado, chopped green onions

Instructions

  1. Mix the shredded chicken with Greek yogurt and blue cheese in a bowl.
  2. Season with salt and pepper to taste.
  3. Take a lettuce leaf and spoon some of the chicken mixture into the center.
  4. Add any additional toppings as desired.
  5. Roll the lettuce leaf around the filling and serve immediately.

Notes

Don’t skip taste testing your filling. Use rotisserie chicken for ease and ensure to wash your lettuce leaves well.
