A comforting and elegant French onion soup ready in just one hour, filled with rich flavors and topped with bubbly Gruyère cheese.

  • 4 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 4 cups beef broth
  • 1 cup dry white wine
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Baguette or French bread, sliced
  • 2 cups Gruyère cheese, shredded

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat.
  2. Add the sliced onions and sugar, stirring often to caramelize for about 20 minutes.
  3. Pour in the beef broth and white wine, adding thyme, salt, and pepper.
  4. Bring to a simmer and cook for another 30 minutes.
  5. Preheat your broiler while the soup simmers.
  6. Ladle the soup into oven-safe bowls, topping each with a slice of baguette and a mound of Gruyère cheese.
  7. Broil the bowls until the cheese is bubbly and golden brown, watching carefully.
  8. Remove from the oven and enjoy your cozy soup.

Notes

Don’t skip the sugar for proper caramelization. Freshly shredded cheese melts better than pre-shredded.
