Easy Sheet Pan Sausage with Vegetables

A quick and comforting meal featuring sausage and veggies roasted together on a single sheet pan.

Ingredients

  • 12 ounces fully cooked smoked sausage, sliced into rounds
  • 1 pound baby potatoes, halved or quartered
  • 2 bell peppers, sliced (any color you like)
  • 1 medium zucchini, sliced into thick half-moons
  • 1 small red onion, sliced into wedges
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large rimmed sheet pan with parchment paper.
  2. Start slicing the sausage, halving the baby potatoes, and chopping up your veggies: the bell peppers, zucchini, and onion.
  3. Toss the sliced sausage, potatoes, bell peppers, zucchini, and onion onto the prepared sheet pan.
  4. Drizzle everything with olive oil. Add in your minced garlic, Italian seasoning, smoked paprika, salt, and black pepper.
  5. Now, toss everything together until it’s evenly coated with the olive oil and spices.
  6. Spread everything into a single layer on the pan.
  7. Roast in the oven for about 25 to 30 minutes, stirring halfway through to ensure even cooking.
  8. If desired, broil for 1 to 2 minutes at the end for a golden-brown finish.
  9. Sprinkle with fresh parsley and drizzle with lemon juice before serving, if you like.

Notes

Feel free to use any vegetables you have on hand or swap the sausage for turkey or plant-based options.
