A fresh and healthy recipe for making Thai spring rolls filled with vibrant veggies and herbs, perfect for quick meals or snacks.

Ingredients

  • Rice paper wrappers
  • Lettuce, cut into thin strips
  • Carrots, cut into thin strips
  • Cucumber, cut into thin strips
  • Bell peppers, cut into thin strips
  • Fresh mint leaves
  • Fresh cilantro
  • Fresh basil
  • Vermicelli noodles (optional)
  • Dipping sauce: Peanut sauce or sweet chili sauce

Instructions

  1. Prepare the vegetables by washing and cutting them into thin strips.
  2. Fill a shallow dish with warm water.
  3. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens.
  4. Lay the softened wrapper on a clean surface and start layering your ingredients.
  5. Fold the sides of the wrapper over the filling, then tightly roll it from the bottom up.
  6. Repeat with the remaining wrappers and fillings.
  7. Serve the spring rolls with your favorite dipping sauce.

Notes

Cut vegetables into thin strips for better fitting in rolls. Don’t over-soak the rice paper, and feel free to customize ingredients.
