Instructions

  3. Combine Ingredients: In a heavy saucepan, mix the granulated sugar, brown sugar, heavy cream, butter, and salt. Stir until the butter melts and sugars dissolve.
  4. Bring to a Boil: Increase heat and bring the mixture to a steady boil until it reaches 238°F to 240°F.
  5. Add Vanilla: Remove the pan from heat and stir in vanilla extract.
  6. Incorporate the Pecans: Add the toasted pecans and stir until well-coated.
  7. Cool Down: Let the mixture cool for 1 to 2 minutes, stirring gently until it thickens slightly.
  8. Drop Spoonfuls: Quickly drop spoonfuls onto the prepared parchment paper.
  9. Let Them Set: Allow to cool completely at room temperature until firm.
