Delicious little bites of happiness with rich caramel and nutty pecans, perfect for snacking or gifting.

Ingredients

  • 2 cups pecan halves or chopped pecans
  • 1 ½ cups granulated sugar
  • ¾ cup light brown sugar, packed
  • ¾ cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Prepare your baking sheet: Line a baking sheet with parchment paper and set it near the stove.
  2. Toast the pecans: In a dry skillet over medium heat, toast the pecans for about 3 to 5 minutes.
  3. Combine ingredients: In a heavy saucepan, add the granulated sugar, brown sugar, heavy cream, butter, and salt.
  4. Bring to a boil: Cook over medium heat, stirring until the butter melts and the sugars dissolve.
  5. Add vanilla: Remove the pan from the heat and stir in the vanilla extract.
  6. Add the pecans: Stir in the toasted pecans until they are fully coated.
  7. Cool slightly: Let cool for about 1 to 2 minutes.
  8. Drop spoonfuls onto the prepared parchment paper.
  9. Allow to set: Let the pralines cool completely at room temperature until firm.

Notes

For best results, use a heavy saucepan and a candy thermometer. If you don’t have a thermometer, watch the mixture closely to prevent overcooking.
