Deliciously crispy on the outside and tender on the inside, these Easy Yellow Squash Fritters are the perfect way to enjoy summer squash.

Ingredients

  • 2 medium yellow squash, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the yellow squash and place it in a clean towel to squeeze out excess moisture.
  2. In a bowl, mix the grated squash, flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper until well combined.
  3. Heat oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet and flatten slightly.
  5. Fry for about 3-4 minutes on each side, or until golden and crispy.
  6. Remove from the skillet and drain on paper towels. Serve warm.

Notes

For best results, ensure to squeeze out excess moisture from the squash and keep the oil hot while frying.
