A simple, hearty, and affordable dish combining smoky sausage, fluffy rice, and vibrant veggies, perfect for any night.

Ingredients

  • 1 pound smoked sausage, sliced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat a little oil in a large pot over medium heat. Sauté the onion, bell pepper, and garlic until softened, about 5 minutes.
  2. Toss in the smoked sausage, cooking until browned, about 5-7 minutes.
  3. Stir in the rice, kidney beans, chicken broth, paprika, salt, and pepper. Bring to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes.
  5. Fluff the rice with a fork and garnish with chopped parsley before serving.

Notes

Stir often to prevent sticking, and feel free to customize with leftover veggies or spices.
