Delicious and easy-to-make flourless muffins packed with peanut butter flavor, perfect for a healthy snack or breakfast.

Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Optional: chocolate chips or nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your muffin tin with paper liners.
  3. Mix together the peanut butter, honey (or maple syrup), eggs, and vanilla in a large bowl until smooth.
  4. Add in the baking soda and salt, and fold in any chocolate chips or nuts if desired.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Cool the muffins before serving.
