  • 1/2 cup butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 lemon, quartered
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rub the whole chicken with butter, ensuring it is evenly coated.
  3. Season the chicken with minced garlic, chopped rosemary, thyme, salt, and pepper.
  4. Place the quartered lemon inside the cavity of the chicken.
  5. Roast the chicken in the oven for 1 to 1.5 hours, until the skin is golden brown and juices run clear.
  6. Let the chicken rest for 10 minutes before carving and serving.
