A quick and indulgent dish featuring juicy shrimp, garlic, and Parmesan cheese, perfect for any occasion.

  • 1 lb large shrimp (peeled and deveined, tails on or off)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced very finely)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/3 cup Parmesan cheese (finely grated)
  • 1/2 tsp kosher salt (plus more to taste)
  • 1/4 tsp black pepper
  • 1 pinch red pepper flakes (optional, but adds a nice kick)
  • 1 tbsp lemon juice (plus wedges for serving)
  • 2 tbsp fresh parsley (chopped, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Don’t skimp on this; a hot oven is key to that perfect roast.
  2. Line a rimmed baking sheet with parchment or foil. This will help with cleanup later!
  3. Pat the shrimp very dry with paper towels. You want to get out any excess moisture—this helps them roast properly.
  4. Add the shrimp, olive oil, minced garlic, oregano, basil, Parmesan, salt, and black pepper to a mixing bowl. Toss to coat the shrimp evenly.
  5. Spread the shrimp in a single layer on the prepared baking sheet. Give them a bit of space; they need to roast, not steam.
  6. Roast for 6 to 9 minutes. They’ll be done when they turn pink, opaque, and just firm.
  7. Drizzle with lemon juice and sprinkle with fresh parsley. Serve hot!

Notes

Make sure to dry the shrimp well for the best roasting results. Adjust seasoning to taste before serving.
