1.5 lbs Cremini mushrooms, sliced (about ¼ inch thick)
4 cloves garlic, minced
4 tablespoons butter, unsalted
2 tablespoons olive oil
½ cup grated Parmesan cheese, plus more for garnish
2 tablespoons fresh parsley, chopped, plus more for garnish
1 tablespoon lemon juice
½ teaspoon dried thyme
¼ teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Instructions
Gently wipe the mushrooms clean with a damp paper towel. Slice the mushrooms about ¼ inch thick.
In a large skillet, melt the butter and olive oil over medium-high heat.
Add the sliced mushrooms to the hot skillet in a single layer. Sauté in batches if needed to avoid overcrowding.
Let the mushrooms cook undisturbed for about 5-7 minutes, or until they start to brown on the bottom. Flip and continue to cook for another 3-5 minutes, or until they’re tender and golden brown all over.
Add the minced garlic to the skillet. Cook for about 1 minute, or until the garlic is fragrant, stirring constantly.
Stir in the dried thyme and red pepper flakes (if using). Cook for another 30 seconds.
Pour in the lemon juice and scrape up any browned bits from the bottom of the pan.
Stir in the grated Parmesan cheese until it’s melted and evenly distributed.
Season with salt and freshly ground black pepper to taste.
Stir in the chopped fresh parsley.
Serve immediately. Garnish with extra grated Parmesan cheese and chopped parsley, if desired.
Notes
Ensure the mushrooms are dry before sautéing to achieve a better sear.
Customize the level of heat by adjusting the amount of red pepper flakes.
Fresh parsley can be substituted with other herbs like thyme or basil for a different flavor profile.
