German Cucumber Salad

A refreshing and creamy salad made with cucumbers, onions, and dill, perfect for summer gatherings.

Ingredients

  • 24 medium cucumbers (about 8 cups cucumbers)
  • 1 large white onion, thinly sliced
  • 3 tablespoons salt
  • 2 teaspoons vinegar
  • 1 cup heavy whipping cream or sour cream
  • 2 tablespoons fresh dill, chopped fine

Instructions

  1. Slice cucumbers thin and place in a large bowl. (A mandoline can be used for this.)
  2. Slice onion and add it to the bowl with the cucumbers.
  3. Sprinkle salt over the top. Allow to sit for 2 hours, or until a large amount of liquid forms in the bowl, almost covering the cucumbers.
  4. Drain the cucumbers and onion and rinse with cold water. (Taste test here; you can rinse again for less saltiness if needed.)
  5. Add heavy cream, vinegar, and fresh dill, and stir well.
  6. Serve immediately or refrigerate until ready to serve.

Notes

  • This salad is best served fresh but can be stored in the fridge for a few hours before serving.
