Delightful scones topped with a sweet glaze and bursting with mixed berries, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, blackberries)
  • 1 cup powdered sugar (for glazing)
  • 23 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Fold in the mixed berries gently.
  6. Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick.
  7. Cut into triangles or rounds and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes or until lightly golden.
  9. Whisk together powdered sugar, milk, and vanilla extract to make the glaze.
  10. Drizzle the glaze over the warm scones and let it set before serving.

Notes

For best results, use very cold butter and chill the dough if it’s too warm. These scones can be frozen before baking.
