Delightful buns filled with apples and currants, perfect for any occasion.

Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup milk
  • 1/4 cup unsalted butter
  • 2 large eggs
  • 1 cup diced apples (preferably Granny Smith)
  • 1/2 cup currants or raisins
  • 1/4 cup mixed peel
  • Water or milk for glaze

Instructions

  1. Combine the flour, yeast, sugar, salt, cinnamon, and nutmeg in a large bowl.
  2. Heat the milk and butter in a saucepan until warm.
  3. Create a well in the flour mixture and pour in the warmed milk and butter along with the eggs. Mix until combined.
  4. Fold in the apples, currants, and mixed peel gently.
  5. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise until doubled in size (about 1 hour).
  7. Punch down the dough and divide it into small balls about the size of golf balls.
  8. Arrange the balls on a greased baking sheet and let rise again for 30 minutes.
  9. Preheat your oven to 375°F (190°C).
  10. Bake for 20-25 minutes until golden brown.
  11. Brush with water or milk for a shiny glaze while hot.
  12. Cool slightly before serving.

Notes

For best results, ensure the milk is warm, not hot, when adding the yeast. Experiment with different types of apples and spices for flavor variations.
