- ½ cup plain Greek yogurt (0% fat, 2% fat or 5% fat)
- 3 or 4 cloves garlic, peeled and grated on a microplane, or finely minced
- 1–2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Half of 1 lemon, juiced (about 1 1/2– 2 tablespoons)
- 1 ½ teaspoons dried oregano
- 1 teaspoon paprika (smoked paprika may be substituted)
- 1 teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- ½ teaspoon dried rosemary, or more to taste if desired
- 1 1/2–2 pounds boneless skinless chicken breasts, diced into 1 1/2-inch chunks
- tzatziki sauce, for serving, optional
- fresh herbs (dill, parsley, mint), optional for garnishing
- In a large bowl, combine Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary to create the marinade.
- Add the diced chicken pieces to the marinade, toss well, cover, and refrigerate for 30-60 minutes (up to 8 hours).
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread the marinated chicken onto skewers without compressing too much.
- Preheat grill or grill pan to medium-high heat. Discard the marinade.
- Grill the skewers for approximately 3-4 minutes, flip and cook for another 2-4 minutes until chicken reaches 160F.
- Let the chicken rest for 5-10 minutes before serving.
- Optionally garnish with fresh herbs and serve with tzatziki sauce or pita bread.
Notes
- Feel free to adjust marinating ingredients to your preference.
- Chicken is usually done when it reaches an internal temperature of 165F.
- Baking time may vary based on chicken size and oven temperature.
