Greek Chicken Kabobs are a flavorful and juicy chicken dish marinated in a mix of Greek yogurt and spices, perfect for grilling.

Ingredients

  • ½ cup plain Greek yogurt (0% fat, 2% fat or 5% fat)
  • 3 or 4 cloves garlic, peeled and grated on a microplane, or finely minced
  • 12 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • Half of 1 lemon, juiced (about 1 1/22 tablespoons)
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon paprika (smoked paprika may be substituted)
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • ½ teaspoon dried rosemary, or more to taste if desired
  • 1 1/22 pounds boneless skinless chicken breasts, diced into 1 1/2-inch chunks
  • tzatziki sauce, for serving, optional
  • fresh herbs (dill, parsley, mint), optional for garnishing

Instructions

  1. In a large bowl, combine Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary to create the marinade.
  2. Add the diced chicken pieces to the marinade, toss well, cover, and refrigerate for 30-60 minutes (up to 8 hours).
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Thread the marinated chicken onto skewers without compressing too much.
  5. Preheat grill or grill pan to medium-high heat. Discard the marinade.
  6. Grill the skewers for approximately 3-4 minutes, flip and cook for another 2-4 minutes until chicken reaches 160F.
  7. Let the chicken rest for 5-10 minutes before serving.
  8. Optionally garnish with fresh herbs and serve with tzatziki sauce or pita bread.

Notes

  • Feel free to adjust marinating ingredients to your preference.
  • Chicken is usually done when it reaches an internal temperature of 165F.
  • Baking time may vary based on chicken size and oven temperature.
