- ½ cup plain Greek yogurt
- 3 or 4 cloves garlic, peeled and grated
- 1–2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Half of 1 lemon, juiced (about 1 1/2–2 tablespoons)
- 1 ½ teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- ½ teaspoon dried rosemary, or more to taste
- 1 1/2–2 pounds boneless skinless chicken breasts, diced into 1 1/2-inch chunks
- tzatziki sauce, for serving (optional)
- fresh herbs (dill, parsley, mint), for garnishing (optional)
- In a large bowl, combine Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, black pepper, and rosemary to make the marinade.
- Add diced chicken pieces to the marinade and toss well. Cover and refrigerate for 30 minutes to 8 hours.
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread marinated chicken onto skewers, being careful not to overcrowd.
- Discard the marinade and cook the chicken using your preferred method: grilling, grill pan, or oven baking.
- For grilling, preheat grill to medium-high heat. Grill skewers for 3-4 minutes, flip, and cook for another 2-4 minutes until done.
- For indoor grilling, preheat a grill pan and cook skewers for about 5 minutes on one side, then 3-5 minutes after flipping.
- For oven baking, preheat oven to 400°F. Place skewers on a grill rack over a lined baking sheet and bake for 20-25 minutes, flipping midway.
- Garnish with fresh herbs if desired and serve with tzatziki sauce or pita bread.
