A delicious and easy-to-make recipe for Greek Chicken Kabobs marinated in Greek yogurt and herbs, perfect for a flavorful dinner.

  • ½ cup plain Greek yogurt
  • 3 or 4 cloves garlic, peeled and grated
  • 12 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • Half of 1 lemon, juiced (about 1 1/22 tablespoons)
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • ½ teaspoon dried rosemary, or more to taste
  • 1 1/22 pounds boneless skinless chicken breasts, diced into 1 1/2-inch chunks
  • tzatziki sauce, for serving (optional)
  • fresh herbs (dill, parsley, mint), for garnishing (optional)

Instructions

  1. In a large bowl, combine Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, black pepper, and rosemary to make the marinade.
  2. Add diced chicken pieces to the marinade and toss well. Cover and refrigerate for 30 minutes to 8 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Thread marinated chicken onto skewers, being careful not to overcrowd.
  5. Discard the marinade and cook the chicken using your preferred method: grilling, grill pan, or oven baking.
  6. For grilling, preheat grill to medium-high heat. Grill skewers for 3-4 minutes, flip, and cook for another 2-4 minutes until done.
  7. For indoor grilling, preheat a grill pan and cook skewers for about 5 minutes on one side, then 3-5 minutes after flipping.
  8. For oven baking, preheat oven to 400°F. Place skewers on a grill rack over a lined baking sheet and bake for 20-25 minutes, flipping midway.
  9. Garnish with fresh herbs if desired and serve with tzatziki sauce or pita bread.
