  • 1 lb ground turkey
  • 2 cups cooked white rice
  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 cup diced bell pepper
  • 1/2 cup shredded carrots
  • 1 cup diced cucumber
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1 teaspoon sriracha or chili garlic sauce (optional)

Instructions

  1. Start by cooking the rice according to package directions. Once it’s done, fluff it with a fork and set it aside.
  2. Whisk together the soy sauce, honey, rice vinegar, sesame oil, and sriracha in a small bowl.
  3. Heat the olive oil in a large skillet over medium heat. Toss in the diced onion and cook for 2 to 3 minutes until softened.
  4. Stir in the minced garlic and grated ginger. Cook for about 30 seconds until fragrant.
  5. Add in the ground turkey. Break it apart and cook for about 6 to 8 minutes until no longer pink.
  6. Throw in the diced bell pepper and shredded carrots, and cook for another 2 to 3 minutes until slightly tender.
  7. Pour the pre-mixed sauce over the turkey mixture and stir well to combine. Let it simmer for about 2 minutes.
  8. Divide the cooked rice between serving bowls. Top each bowl with the turkey mixture.
  9. Finish with cucumber, avocado slices, green onions, and a sprinkling of sesame seeds.

Notes

Use fresh vegetables for a crisp texture. Cook rice a bit in advance for best results.
