A comforting casserole of ground turkey, sweet potatoes, and cheese, perfect for weeknight dinners or gatherings.

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ground turkey in a large skillet over medium heat until no longer pink, about 5-7 minutes.
  3. Add the chopped onion and garlic; sauté until the onion is translucent, about 3-4 minutes.
  4. Combine the sweet potatoes, corn, black beans, cumin, paprika, salt, and pepper in the skillet; stir well.
  5. Cook for another 10-15 minutes, stirring, until sweet potatoes are slightly tender.
  6. Transfer the mixture to a casserole dish and spread evenly.
  7. Top with cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden.
  9. Garnish with fresh cilantro before serving.

Notes

Prepare ahead of time and refrigerate, adding extra baking time if cooking from cold.
