Ingredients

  • 2 cups water
  • 2 grilled chicken breasts, sliced
  • 1 cup bell peppers, diced (any color)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon juice (optional)

Instructions

  1. Rinse the quinoa under cold water.
  2. Cook the rinsed quinoa and water in a medium pot; bring to a boil, then simmer for 15 minutes.
  3. Grill the chicken breasts until fully cooked, about 6-8 minutes per side.
  4. Mix the cooked quinoa, sliced chicken, bell peppers, cherry tomatoes, cucumber, and avocado in a large bowl.
  5. Dress the bowl with olive oil, salt, pepper, and lemon juice; toss gently to combine.
  6. Serve immediately or store in meal prep containers for later.

Notes

Rinse quinoa to remove bitterness and ensure it is fluffy, not mushy. Use a hot grill for perfect char marks.
