A comforting bowl of chicken soup filled with nourishing ingredients to revitalize your spirit and satisfy your hunger.

Ingredients

  • 1 pound of chicken breast
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup of kale or spinach
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: fresh herbs like parsley or thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions, carrots, and celery; sauté until softened (about 5 minutes).
  3. Stir in minced garlic and cook for an additional minute.
  4. Add chicken breast and chicken broth to the pot; bring to a boil and reduce to a simmer.
  5. Cook for 15-20 minutes or until chicken is cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in kale or spinach and season with salt and pepper.
  8. Simmer for an additional 5 minutes or until greens are wilted.
  9. Serve warm, garnished with fresh herbs if desired.
