1 can chickpeas, drained and rinsed
1 ripe banana
1/2 cup cocoa powder
1/4 cup peanut butter or almond butter
1/4 cup maple syrup or honey
1 tsp vanilla extract
1/2 tsp baking soda
Pinch of salt
Optional: chocolate chips or nuts for mixing in
Instructions
Preheat the oven to 350°F (175°C).
In a food processor, combine the chickpeas, banana, cocoa powder, peanut butter, maple syrup, vanilla extract, baking soda, and salt. Process until smooth and creamy.
If desired, mix in chocolate chips or nuts with a spatula for added texture.
Drop spoonfuls of the cookie dough onto a lined baking sheet, spacing them out for even baking.
Bake for 10-12 minutes, or until the edges are firm and the cookies are slightly puffed.
Allow them to cool a bit before serving. Enjoy your healthy cookies!
Notes
Use a well-ripened banana for added sweetness and creaminess. For a nut-free option, swap the nut butter for sunflower seed butter.
