A delightful, creamy, and refreshing peach ice cream made with coconut milk that’s both dairy-free and vegan-friendly.

Ingredients

  • 3 ripe peaches, peeled and sliced
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine sliced peaches, coconut milk, honey or maple syrup (if using), vanilla extract, and salt in a blender. Blend until smooth.
  2. Taste and adjust sweetness as needed.
  3. Pour the mixture into a chilled bowl and place it in the freezer.
  4. Stir every 30 minutes for about 2-3 hours, until the ice cream is firm but scoopable.
  5. Serve and enjoy!

Notes

Freeze the bowl beforehand for better results. Don’t skip stirring every 30 minutes to ensure a creamy texture.
