A comforting and healthy dish with ground beef, fresh veggies, and melted cheese, baked in one dish.

Ingredients

  • 1 lb ground beef (or turkey for a leaner option)
  • 4 bell peppers, chopped
  • 1 onion, chopped
  • 2 cups diced tomatoes (canned)
  • 1 cup cooked rice (brown rice recommended)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook your ground beef in a large skillet over medium heat until browned, about 5-7 minutes.
  3. Add the chopped onions and bell peppers, sautéing until softened, around 4-5 minutes.
  4. Stir in the diced tomatoes, cooked rice, garlic powder, onion powder, salt, and pepper.
  5. Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  7. Serve warm and enjoy!

Notes

Let the dish cool slightly before serving, as it thickens more as it cools.
