A cozy and elegant herb butter beef tenderloin roast, perfect for special occasions and celebrations.

  • 4 lbs beef tenderloin roast, trimmed
  • 4 tbsp olive oil
  • 1 stick (½ cup) unsalted butter, softened
  • 2 tbsp fresh rosemary, minced
  • 2 tbsp fresh thyme, minced
  • 3 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 450°F (230°C) and prepare a roasting pan.
  2. Rub the beef tenderloin with olive oil, then season with salt and pepper.
  3. Combine the softened butter, rosemary, thyme, garlic, and Dijon mustard in a bowl.
  4. Spread the herb butter mixture evenly over the roast.
  5. Transfer the roast to the oven and cook for 25–30 minutes, aiming for 130°F (54°C).
  6. Remove from the oven and let it rest for about 15 minutes.
  7. Slice and serve with pan juices.
