A comforting dish of herb-seasoned chicken served with creamy mashed potatoes and sweet glazed carrots.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (thyme, rosemary, or oregano)
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt to taste
  • 4 large carrots, sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon butter for glazing

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C).
  2. Prepare the chicken: Rub the chicken breasts with olive oil, dried herbs, salt, and pepper, then place in a baking dish and bake for 30-35 minutes.
  3. Boil the potatoes: Cook cubed potatoes in salted water until tender, then drain and mash with butter and milk.
  4. Glaze the carrots: Sauté sliced carrots in butter and brown sugar until tender, about 10 minutes.
  5. Serve and enjoy: Plate the herb chicken with mashed potatoes and glazed carrots.

Notes

Allow chicken to rest after cooking for juiciness. Use a ricer for fluffier mashed potatoes.
