4 salmon fillets, skin removed (about 6 oz each)
8 oz cream cheese, softened
2 tbsp fresh dill, chopped
2 tbsp fresh chives, chopped
1 tbsp lemon zest
1 garlic clove, minced
Salt and pepper, to taste
1 lb fresh asparagus, trimmed
2 tbsp olive oil
1 tbsp lemon juice
1 tsp smoked paprika (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss asparagus with olive oil, salt, pepper, and smoked paprika if using. Spread in a single layer on the baking sheet. Roast for 12-15 minutes, until tender but still crisp.
In a medium bowl, combine cream cheese, dill, chives, lemon zest, garlic, salt, and pepper until smooth.
Lay salmon fillets flat on a clean surface. Spread an even layer of the herbed cream cheese mixture on each fillet.
Carefully roll up each salmon fillet tightly and secure with toothpicks if needed.
Heat a large oven-safe skillet over medium heat. Add a little olive oil and sear the salmon rolls seam-side down for 2-3 minutes until golden.
Transfer skillet to the oven and bake for 8-10 minutes, until salmon is cooked through and flaky.
Remove toothpicks and plate salmon rolls atop the roasted asparagus. Drizzle with lemon juice before serving.
