Delicious herbed cheese-stuffed salmon rolls served on a bed of roasted asparagus.

Ingredients

  • 4 salmon fillets, skin removed (about 6 oz each)
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh chives, chopped
  • 1 tbsp lemon zest
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 1 lb fresh asparagus, trimmed
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss asparagus with olive oil, salt, pepper, and smoked paprika if using. Spread in a single layer on the baking sheet. Roast for 12-15 minutes, until tender but still crisp.
  3. In a medium bowl, combine cream cheese, dill, chives, lemon zest, garlic, salt, and pepper until smooth.
  4. Lay salmon fillets flat on a clean surface. Spread an even layer of the herbed cream cheese mixture on each fillet.
  5. Carefully roll up each salmon fillet tightly and secure with toothpicks if needed.
  6. Heat a large oven-safe skillet over medium heat. Add a little olive oil and sear the salmon rolls seam-side down for 2-3 minutes until golden.
  7. Transfer skillet to the oven and bake for 8-10 minutes, until salmon is cooked through and flaky.
  8. Remove toothpicks and plate salmon rolls atop the roasted asparagus. Drizzle with lemon juice before serving.
