Homemade French Onion Soup

A classic, comforting soup made with caramelized onions, beef broth, and topped with melted Gruyère cheese.

  • 4 large onions, thinly sliced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 cup white wine
  • 2 tablespoons flour
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Baguette or crusty bread, sliced
  • 2 cups grated Gruyère cheese

Instructions

  1. Sauté the onions: In your large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook them, stirring occasionally, until they caramelize. This will take about 30 minutes. Don’t rush this step; you want those onions to turn golden and sweet.
  2. Thicken it up: Stir in the flour and cook for an additional minute. This is where the magic starts.
  3. Deglaze the pot: Pour in the white wine and scrape the bottom of the pot to deglaze it. You’ll get all those tasty bits incorporated into the soup.
  4. Add the broth: Stir in the beef broth and thyme. Season with salt and pepper to taste. Bring it to a simmer and cook for 20 minutes.
  5. Prep for broiling: Preheat your broiler while waiting.
  6. Assemble: Ladle the soup into oven-safe bowls. Top each with a slice of baguette and a generous amount of Gruyère cheese.
  7. Broil: Place the bowls under the broiler until the cheese is bubbly and golden brown. Watch it carefully; it can go from perfect to burnt in a minute.
  8. Serve hot: Enjoy it warm right out of the broiler! Just don’t burn your mouth… I’ve done that too many times!

Notes

Patience is key for caramelizing the onions to achieve sweetness. Feel free to customize with different cheeses or herbs.
